Un encendido romance con los anticuchos se vive en las calles de Lima desde tiempos coloniales. Los más famosos, anticuchos de corazón, (hechos con corazón de vaca), son popularísimos en todo el país. Sin embargo también los hay de lomo, pollo, mariscos, carnero, vegetales… y mis favoritos, los anticuchos de hígado de pollo, con un poquito de salsa de aji mirasol. Mi hija siempre me ha visto con cierto reproche ya que ella es una apasionada vegetariana. Pero tengo que confesar que este gusto por los anticuchos de hígado de pollo me tomó por sorpresa cuando llegué a vivir a Perú, pues en ese momento yo también era casi completamente vegetariana.
- 6 pechugas de pollo sin piel ni hueso
- Sal y pimienta
- 2 dientes de ajo picados
- 2 – 4 cucharadas de pasta de ají mirasol
- 1 cucharada de aceite vegetal
- 1 cucharadita de orégano seco
- Pizca de comino
- Aceite vegetal
- 6 papas hervidas, peladas y cortadas en rodajas gruesas
- Corta la pechuga en cubos como de 5 cms. Sazona con sal, pimienta, ajo, pasta de ají mirasol, aceite y comino. Cubre y marina en la refrigeradora al menos por dos horas.
- Inserta unas piezas de pollo en cada palito de bambú y cocina a la parrilla o en la sartén por unos minutos, volteando para que no se recocine el pollo.
- Mientras tanto calienta un poquito de aceite vegetal en una sartén y fríe las rodajas de papa hasta que estén doradas.
- Para servir: pon dos palitos de anticucho por porción con papas doradas al costado. Una ensalada verde y salsa criolla serán también perfectas en este plato.

In Puerto Rico, we call these pinchos. My husband fell in love with the street vendors selling pinchos of all kind when he made his 1st visit to Puerto Rico 3 years ago. Love this!
