Estofado de pollo (guiso de pollo Peruano) – La magia de cocinar en casa

Trabajar en la cocina es como magia. Con unos pocos ingredientes, la cantidad adecuada de condimentos y hierbas y un poco de picante (o a veces ni siquiera eso), puedes preparar un plato delicioso que es mucho más que la suma de sus partes. El guiso de pollo, conocido en todos los hogares peruanos como estofado de pollo, es solo otro ejemplo de esto, que convierte una comida sencilla en gratificante en tan solo unos pocos pasos.

Esta receta también es lo suficientemente versátil como para prepararla para el almuerzo o la cena, servirla con arroz o pasta, convertirla rápidamente en un plato principal vegetariano o incluso convertirse en un tentador sándwich en un abrir y cerrar de ojos. Puedes cambiar las verduras para obtener un plato diferente cada vez (los champiñones y las judías verdes son buenas opciones); reemplace las papas en el guiso con una guarnición de puré de papas o, si está de buen humor, una papa gratinada es otra guarnición maravillosa.

Me gusta hacer este guiso de pollo cuando hace frío. Pero la mayor parte del tiempo me sirvo sólo las verduras y el arroz blanco y esponjoso, cubierto con la salsa para guisar. ¡Simplemente delicioso! A veces reservo el pollo para más tarde y lo uso para hacer un sándwich bañado con la rica salsa, aunque tengo que admitir que prefiero comer este guiso apenas esté listo, porque no me gusta el sabor del pollo refrigerado.  Pero eso es sólo una cuestión de gusto personal.

A mucha gente le gustan aún más los guisos después de varias horas o incluso al día siguiente, y los peruanos en particular son grandes fanáticos de lo que llaman calentado. Esto significa «calentado» y es el término utilizado para los platos que se comieron en el almuerzo y luego se recalentaron nuevamente para la cena.

El secreto de un gran estofado de pollo es cocinar la carne a fuego muy lento. De esta manera quedará tierno al tenedor y los sabores se fusionarán para darle su sabor maravilloso y reconfortante. Puedes reemplazar el pollo con carne de res, pato o cordero, o como mencioné antes, convertirlo en vegetariano/vegano usando trozos de carne simulada (ver imagen a continuación).

Ingredients
  • 4 piernas y muslos de pollo
  • Sal y pimienta
  • 4 cucharadas de aceite vegetal
  • 1 taza de cebolla, finamente picada
  • 2 dientes de ajo, finamente picados
  • 2 cucharada de pasta de tomate
  • ½ taza de vino dulce (opcional)
  • 2 tazas de caldo de pollo
  • 1 hoja de laurel
  • 4 papas amarillas, peladas
  • 1 taza de zanahorias, paladas y cortadas en finas rodajas
  • ½ taza de guisiantes verdes (alverjitas)
  • ½ taza de pasas
  • Arroz esponjoso o pasta
  • Ramitas de perejil
Instructions
  1. Sasone el pollo con sal y pimienta
  2. Calienta 2 cucharadas de aceite en una sarten a fuego medio. Dorar los trozos de pollo hasta que esten dorados, volteandolos una vez. Pasar a un bowl y reservar.
  3. Agregar el aceite restante a una sarten y cuando este caliente agregar la cebolla y  el ajo. Cocine a fuego medio-alto, revolviendo cada pocos minutos hasta que este suave, aproximadamente 7 min. Agregue la pasta de tomate y revuelva cocinando por 3 minutos.
  4. Vuelva a poner el pollo en la sarten y agregue el vino. Lleve a ebullicion y agregue el caldo de pollo y la hoja de laurel. Tapar, bajar el fuego y cocianr por 3 minutos.
  5. Agregue las papas, zanahorias, guisantes y las pasas. Continue cocinando durante 15 a 20 minutos o hasta que las verduras esten suaves.
  6. Sirva con arroz o como salsa para la pasta y decore con ramitas de perejil.

    • My husband is Peruvian and I learned to make this hearty, humble chicken stew from my mother in law. It utilizes potatos–very Peruvian. Peru has 4000+ varieties. There’s various variations depending on what part of Peru you are from. Some use aji panca (a dried pepper paste you can buy in Latin American markets) along with the tomato paste–slightly spicy and super flavorful. Some add cilantro in the final stage, and some add delicious Peruvian olives for an extra briny flavor. If you want to make the dish even more Peruvian, I would suggest adding these elements.

    • Yes, perhaps is derived. The difference is that the world didn’t know about the existence of the potatoes until the arrival of the Spanish conquistadors. Therefore, the uniqueness of the dish as a Peruvian.

  7. Can I make this with chicken breast instead? I LOVE, ADORE, WORSHIP Peruvian food but am trying to find new ways of cooking that is more in the lower calorie and fat side.

  8. Well, First of all, I wouldn’t worry that you version of this dish is 100% Peruvian as it originally hails from Spain.

    That being said, if the ingredients for your Mushroom Stew (Estofado) is any indication of your Chicken version…I think you have a pretty good handle on the recipe!

    My wife, born in Huancaspata Peru has been making her Estofado just like this for years. She, like her mother, and her mother’s mother (all of them being 100% Peruvian), add ingredients that seem to be traditional to their family…namely a good tablespoon of paprika…and they rarely add wine.

    This is like any other “stew” produced on the planet. Ya put in it what ya got! You want Gummi bears in it? Although not my first choice…knock yourself out.

    So, don’t worry about any food Nazis that want to nit pick your recipe…you’re doing fine!
