Green Juice with Maca a.k.a Andean Awakening

My mom and I are obsessed with juicing. In fact, I started drinking vegetable juices when I was entering my teenage years, because she made them for herself quite often in her big, squared, red juicer from the 80’s that still works and we still use. Ah, the good ol’days when machines were made to last!

Juicing is now a big trend in many cities around the world. In New York it’s insane, you can’t turn a corner without bumping into a juice bar. It seems like green juices have replaced the cupcakes from 10 years ago, which I think is a great step in the right direction. I don’t care what those who trash juices as a silly fad say. If our choices are Burger King, cupcakes, or juices, I think everyone knows which is best.

We love juices so much, that we recently finished working on a detox juicing book that you can already buy on Amazon. But in the meantime, I wanted to share with all of you a juice I created for Latinamom.me a few weeks ago using one of my favorite Peruvian superfoods: maca. This energizing root from the Andes will give you all the energy you need to be on top of your game throughout the whole day. That, on top of all the top notch nutrition the green juice will give to your every cell. Have it every morning for a week and see how you feel. I already know the answer 😉

Prep time: 15 minutes

Yields two servings

 

Ingredients:

1 cucumber
1 heart of romaine lettuce
2 celery stalks
3 cups spinach
1 Granny Smith apple
1 Valencia orange
2 tablespoons maca powder

 

Preparation:

Juice all the fruits and vegetables in a juicer.
Stir in the maca powder and serve.
