¡Es mi día favorito de la semana otra vez! Lo siento, sé que el cliché es odiar los lunes, y no soy muy comprensivo con todos aquellos que temen el comienzo de la semana de trabajo… pero ¿cómo no me gustaría un #LunesSinCarne? He sido vegetariano la mayor parte de mi vida, desde los 4 o 5 años, cuando mi madre puso un pavo de Navidad sobre la mesa. Tener un animal muerto en nuestra mesa de cena, y celebrarlo, simplemente no me parecía correcto, y aún no lo es. Y a pesar de que no estoy tratando de cambiar las mentes aquí, o insinuar algo que pueda ir en contra de las creencias de alguien, tengo que admitir que la tendencia #LunesSinCarne que sucede en Internet hace que mi corazón feliz baile en este día.
Mi receta de hoy es una de mis entradas favoritas, y no hay absolutamente ninguna razón por la cual vegetarianos (o veganos ) no debería disfrutarlo. Es demasiado bueno para perderlo, así que hemos descubierto uno para ti (guiño). No te olvides de servirlo con arroz y papas fritas (suelo usar arroz integral, pero he hecho arroz blanco hoy por autenticidad). Esto puede parecer demasiado, pero cuando el arroz y las patatas fritas se mezclan con el salteado y absorben todos los jugos, entenderás por qué lo comemos de esta manera.
¡Feliz comer sin carne!
- 1 paquete de hongos portobello (2-4 hongos grandes), en rodajas.
- 2 dientes de ajo finamente picados
- 3 cucharadas de aceite vegetal
- 1 cebolla roja cortada en rodajas gruesas
- 2 tomates cortados en rodajas gruesas
- 1 ají amarillo con semillas y acanalado cortado en rodajas finas (puede sustituirlo con 1 cucharada de ají y pasta tímida, o con cualquier ají que pueda encontrar)
- 3 cucharadas de salsa de soja
- 3 cucharadas de vinagre de vino tinto
- Sal y pimienta
- ½ taza de perejil fresco, picado
- 2 tazas de papas fritas
- Arroz blanco o integral cocido con 2 dientes de ajo finamente picados, como guarnición
- *Pon un wok o una sartén a fuego muy alto. Agregue el aceite y saltee los portobellos, el ajo, la cebolla, el tomate, el chile y remueva durante unos minutos. Agregue la salsa de soja y el vinagre, y mezcle todo. Sazonar con más sal y pimienta.
- *Quite el fuego, agregue el perejil picado y sirva inmediatamente con papas fritas y arroz blanco, y el jugo del sofrito.

I am not a vegan but with my new found allergies to some foods, I can actually eat this dish. I am going to have to try it out.

Brilliant! What a great idea. I was vegetarian for 3 years and mushrooms have always been a favorite. I eat meat now, but I still love mushrooms and don’t feel that I have to have meat with every meal.

I just made this for dinner and I cant believe how similar this tasted to the way my mother makes Lomo Saltado….Lomo Saltado was one of my absolute favorite peruvian dishes and I truly missed it when I became a vegetarian (amongst many other peruvian dishes). Im so glad I found your website and am so glad you have this recipe….its unbelievably delish…and so so easy to make. My Irish husband who luvs peruvian food…loves this recipe!!!

I can’t wait to make this! My husband is Peruvian and I lived in Peru for 2 years. I am vegan, and used to make lomo saltado with TVP, but Portobello mushrooms sound like such a better substitute!! I may even get my meat-loving husband to love it!
Emily, I think you’re right. You husband will probably love it! We have turned many die hard meat lovers into veggie lomo saltado fans. It also happens very often with the vegetarian papas rellenas. You should try those too! 😉
What kind of white rice do you use in most of your dishes?
We use a large grain rice very similar to jazmine rice. Sometimes I love to use Basmati but that is not usual in Peruvian cooking.
