- 1kg de Papas
- ¼ taza de aceite vegetal
- ½ de carne de soja picada (o carne picada)
- 1 cebolla, picada en cubitos
- 2 dientes de ajo picados
- 1 cucharada de ají panca pasta (pasta de ají panca que puedes encontrar en muchas tiendas o en línea. Opcional)
- 1 cucharada de pasta de tomate
- 2 huevos duros, pelados y picados
- ½ taza de pasas
- ½ taza de aceitunas negras, rebanadas
- Sal, pimienta
- Perejil picado
- Harina para todo uso
- 2 huevos
- *Siga las instrucciones en el paquete de carne de soja (algunos requieren remojo durante alrededor de media hora).
- *Cocine las papas en una cacerola con agua hirviendo hasta que estén tiernas (alrededor de 20 minutos, pero depende de la papa). Pélelos mientras está caliente, tan rápido como puedas. Pásales a través del ricer de una vez. Agregue sal y pimienta. Manténgalo cubierto mientras cocina el relleno.
- *En una sartén, caliente el aceite a fuego alto, agregue la cebolla y el ajo revolviendo, luego la pasta de tomate y el ají panca, si se usa. Agregue la carne de soja (o carne real, si lo prefiere), sal, pimienta. Revuelva y cubra la cacerola. Cocine a fuego lento durante unos 15 minutos, revolviendo de vez en cuando.
- *Incorpore huevos duros, pasas, aceitunas y perejil. Apaga el fuego.
- *Con las manos enharinadas, amasar las papas durante unos segundos. Tome una porción de la masa de papa y aplánela entre sus manos. Con una cuchara ponga una porción del relleno de soya en el centro de la paleta. Ciérrelo con un poco de masa extra de papa y forme un poco de "fútbol".
- *Ponga la harina en un recipiente y mezcle los 2 huevos adicionales en otro recipiente. Enrolle cada rollo en los huevos, luego en la harina, agite el exceso y fría en una sartén caliente con aceite caliente hasta que la papa forme una fina capa dorada y crujiente. Muévase de vez en cuando para asegurarse de que cada lado se vuelva dorado.
- Escurra sobre una toalla de papel y sirva inmediatamente, con Salsa criolla o arroz puro.

Morena, I grew up eating Cuban papa rellena in Miami. Yours looks sooo much better! I never would have attempted to make it because the Cuban ones look so uniform, so machine-made LOL…but yours are beautiful and would be such a gourmet thing to cook here where I live.

Girl, you just took me back to my childhood living in Miami. My mami used to make Cuban papas rellenas and sell them on the corner! She’d sell out before noon! She did that for about 4 years. So labor intensive but the reward of having repeat customers everyday was so worth it. Now, I love making them! These look great!
Oh, raisins! You caught my attention! I am loving your site, I have a lot of Peruvian friends (and once had a Peruvian boss) so I have had the chance to try some of your wonderful dishes.
Just saw this today. The recipe is similar to what I’ve done in the past. As a variation, I’ve used chopped cilantro instead of parsley. I’ve also «cheated» in the past and used those mashed potato flakes instead of boiling potatoes and mashing them. It saves time in a pinch. 🙂
