Sal De Maras – Maravilla De Los Andes

En los valles cercanos a la ciudadela perdida de los Incas, una recolección de sal se ha llevado a cabo por más de dos mil años. Las 4,200 terrazas de sal se pueden ver a la distancia como una enorme escalera de mármol, descendiendo sobre la ciudad. Hay muchos colores: gris, verdes, rosados, ocres y rosados. Algunas piscinas brillan como la nieve, llenas de blanca sal de la mejor calidad, lista para ser recolectada. Otras se ven como pequeños charcos calentándose bajo el sol.

Estas terrazas quedan cerca de Maras, en el Valle Sagrado, entre Cusco y la ciudadela de Machu Picchu, una localidad remota que por siglos ha sido protegida de la contaminación. Este salar ha sido explotado desde la época de los Inca, y por generaciones las mismas familias han trabajado en estas saladas terrazas, desde hace más de mil años.  

La primera vez que escuché hablar de la sal rosada peruana fue hace un par de años en un curso de Ayurveda que tomé con Sacha Barrio, un conocido doctor limeño, experto en medicina china. El mostró esos bellísimos cristales rosados en la clase y nos comentó que era la sal más saludable y nutritiva del planeta, que solo se encuentra en Los Andes y en Los Himalayas. ¡Qué suertudos que somos! Bueno… no realmente. Por qué los peruanos -y me incluyo- no consumimos diariamente esta poderosa sal es todavía un gran misterio para mí.

Meses más tarde, y ya viviendo en la ciudad de Nueva York, me di cuenta de que la sal secreta proveniente de Los Himalayas, no era tan secreta después de todo, ya que la podía encontrar en casi cualquier tienda de alimentos. Pero la versión andina, nuestra sal de Maras, casi no se hallaba en ninguna parte, solo en dos o tres tiendas de alimentos naturales. No fue hasta hace un mes, caminando por uno de los stands en la Feria de Alimentos Peruanos, que me encontré con dos encantadoras jóvencitas: Tatiana y María Claudia, promoviendo Booming Gourmet, su propia marca de la sal rosada de los Andes.

Como soy una obsesionada de todo lo nutricional y holístico, estuve fascinada escuchándolas hablar sobre la alta vibración energética de esta sal, y que su fuente se cruza con una área de quarzo rosado que tiene muchas propiedades curativas. Como se pueden imaginar no necesité oir mucho más para convencerme de que esta es la sal que necesito tener en mi cocina. He aquí otros beneficios de esta maravilla mineral:

* Ayuda a estabilizar y regular los latidos del corazón gracias a su contenido de magnesio y sodio.

* El sodio es esencial para un apropiado funcionamiento muscular.

* La sal de buena calidad ayuda a minimizar los efectos del stress, manteniendo niveles óptimos de melatonina, serotonina y triptamina en el cerebro.

* Ayuda a remover la acidez celular, especialmente en los riñones y el cerebro.

* Ayuda a prevenir la temida osteoporosis.

* Estabiliza los niveles de glucosa en la sangre para ayudar a prevenir la diabetes y para que los diabéticos necesiten menos insulina.

* Provee yodo natural, para que la tiroides lo absorba fácilmente y pueda regular el sistema endocrino.

Y por si todo esto fuera poco, tiene un sabor delicioso y aporta una textura crujiente a la comida. Personalmente me encuentro en una misión para usar más sal peruana en todas mis comidas. Hasta ahora lo estoy logrando y me encanta. (Estoy segura de que mi cuerpo también está feliz.)

  1. I always use some form of seasalt or natural salt, but I do have a special jar of Himalayan Pink salt that has a is so pretty part of me doesn’t want to use it up! I wonder if there is a difference?

      Himalayan and Pink Peruvian salts are untreated and are a natural source of minerals. For example the Himalayan has magnesium, iron & potassium, like our Pink Peruvian, but Peruvian artisan faintly pink crystals salt has a high moisture & mineral content (80+) making it an exciting alternative to traditional French salts such as Sel Gris.

      Himalayan sea salt is typically used in bath & body care products and as a culinary ingredient, while Pink Peruvian, salt is used as a gourmet ingredient in cooking because of its flavor (The finishing salt’s flavors are complex and mild, rounded and semi-sweet, and dissolve with an understated but resilient crunch on food) and high humidity.

  8. I started using pink salt about 5 years ago. It’s soo good and has a lovely flavor and texture. Have you used pink salt blocks for curing? Talk about enigmatic! Check it out if you haven’t. Great history lesson, here.

    Yes I have. It is GREAT!!!
    This salt goes particularly well with meat.
    Since I have been using it I can really taste the difference.

  12. I now use Kosher salt, I think it’s just better than table salt. Of course sea salt would be the best, but it is rare to find it over here, unfortunately.

    I’ve used sea salt for years now. As I don’t taste food very well, the sea salt wasn’t anything special. My daughter told me about Himalayan Pink salt, so I finally found and tried it.My food taste so good with it. As you can imagine,I’m amazed and thrilled.
    After reading about the Peruvian salt, I definitely intend to try it too.

  19. Just returned from a wonderful trip to Peru which included an afternoon at Maras. Bought a lot of edible salts in varying colorful shades and can’t wait to try my medicinal salt with herbs bath soak. This is a must see spot. Actually, everything in Peru needs to be seen, heard, smelled, touched and tasted!
