Cada vez que pienso en salchipapas, viene a mi un sentimiento de deliciosa simpleza. Este platillo nacional -que se consume también en otros países de la región- es exactamente lo que su nombre indica: salchichas + papas. Salchi-papas. Minimalismo en su máxima expresión. Con una lista de ingredientes tan corta me pregunto si acaso necesitas una receta para esto. La preparación es super sencilla y va así: fríes las papas y las combinas con salchichas fritas. Nada podría ser más fácil. El único trabajo que tienes que hacer es cortar las papas y las salchichas. Y freírlas. En Perú hay que comprar las papas, lavarlas, pelarlas, picarlas y freírlas. Pero si vives en los Estados Unidos puedes comprar esas bolsas de papas fritas congeladas que no requieren ningún trabajo, solo freírlas nuevamente o ponerlas al horno.
Las Salchipapas son muy populares en los mercados y en algunas carretillas en las calles de la ciudad. También puedes encontrarlas en restaurantes de comida rápida que se especializan en este tipo de platillos, y también las venden en el Estadio durante los partidos de fútbol. Hay muchas variaciones que se pueden hacer con distintos tipos de salchichas, así como con camote o yuca en vez de las papas. Para acompañar este plato siempre tienes que servir muchas salsas, como ketchup, mostaza, mayonesa, salsa de ají, etc.
Los niños sienten una fascinación especial por las salchipapas, claramente porque aman las salchichas (¿sabías que en Perú se les llama hotdogs?) y las papas fritas (no es una combinación muy saludable que se diga). Otra ventaja de este colorido plato es que se hace en solo unos minutos, especialmente si tienes esas papas ya listas, como te comenté antes.
Lo que te puedo recomendar, aunque no es la manera tradicional de comerlas, es que sirvas tus salchipapas en casa junto con una gran ensalada. Ahora ESA será una comida que tanto las mamás como los niños estarán felices de compartir. ¿Tú qué opinas?
- 1 papa grande, pelada y cortada en palitos
- Aceite para freír
- Sal
- 4 salchichas de carne de res (pollo o cerdo, si prefieres)
- Ketchup
- Mostaza
- Pasta de ají amarillo
- Mayonesa
- Hojas de perejil
- En una sartén grande calienta el aceite a fuego alto.
- Seca las papas con papel toalla y fríe por pocos hasta que doren. Escurre en más papel toalla.
- Si usas las congeladas, caliéntalas en el horno a 45'°F por 18 minutos. Rocía con sal.
- Mientras tanto corta las salchichas en rodajas o tajadas. Calienta una cucharadita de aceite en una sartén y saltéalas rápidamente hasta que doren.
- En la misma sartén combínalas con las papas fritas. Sirve de inmediato con ketchup, mostaza, mayonesa, etc.
- Decora con hojitas de perejil.

Sometimes the very best food is the most typical of the streets or the small towns. It is good because it is comforting and filling. This reminds me of my childhood, too. And it is quick and easy for a summer of running in and out with the kids.

We eat salchipapas in Colombia too, but the sauce we use is salsa rosada (Ketchup & mayo).
Our countries share a lot of their traditions and their flavors. Salsa rosada is a good addition to salchipapas.

we make salchichas a lot and it them to yellow rice but never even occurred to enjoy with thick fresh cut fries!

Hi Natalia! For the best salchipapas use regular frankfurters, the onew you buy to make hotdogs. They are very similar. Let us know if this works for you.
I came to this website because I was craving Papas Rellenas, but will stay forever because these recipes feed my soul.
I lived in Lima, Peru for 2.5 years and miss it something terrible at times. THe people, the food, and the school I taught at…reading through these recipes has made me remember so many wonderful times that I may not have brought to mind otherwise. As I read a recipe I am like, «Oh, yeah! I remember this one! I had it wit so-and-so and such-a -place!»
This recipe made me laugh out loud! I remember my first months down there and thinking, «What is the Peruvian obsession with hotdogs!!!!» Good times! The only thing I would change is that I do not think I EVER saw this dish without the other food obsession of Lima…a fried egg!!!! You gotta top t salchipapas with heuvos! 😉

I have come back to this page over and over again for recipes. My husband is from Lima and his mama makes the best food ever. So while we wait our turn to have them in our house, I have to cook.
I love this dish and have made it with different variations. My latest version is with southern hash browns and thick cut onions. It is really good. I can’t imagine any more boiling a hotdog like my mother did.

I will like to know if the hot dogs or sausages cook better in the flat grill or in a fryer. Also if is better to boil the hot dog first or just fry it or grilled first. Please let me know.
At home we cook hot dogs in a skillet. If you have a grill, use it. There is no need to boil them, just fry them. Enjoy!

In Finland we call this dish makkaraperunat, like exactly the same as you do. Makkara = sausage and PERUna is potato. 🙂
