Combine the diced ingredients to make the tropical salsa. Would you like it hot? Add some heat to this dish using habanero peppers or diced rocoto. If you have the tropical salsa to top the sausages with ready beforehand, you’ll have a tasty and flavorful dish in minutes, and I have no doubt you’ll go back to it many times. Other Peruvian options are the ubiquitous Salsa Criolla or several chili pepper sauces, like Aji Amarillo Sauce.
I wanted my sandwich to be as low in calories and fat as possible, that’s why I decided to use Flatout Foldit, which are also a good source of fiber and of course perfect for wraps, pinwheels, and super easy pizzas that you can prepare in the blink of an eye. Finally season the choripan with mustard, chili sauce, mayonnaise or other condiments, top the sausages with the tropical salsa and dig in! (Don’t forget to have several napkins at hand!)
- Salsa:
- ½ cup red beans, cooked
- 2 tablespoons onion, diced
- 1 tomato, diced
- ½ avocado, diced
- ½ ripe plantain, peeled, fried and diced
- Salt and pepper
- Juice of 1 lime (or lemon)
- Cilantro leaves
- Sandwich:
- 2 sausages
- 1 Flatout Foldit
- Lettuce leaves
- Mustard
- Chili pepper sauce (optional)
- Mayonnaise (optional)
- Salsa:
- Combine the beans, onion, tomato, avocado, fried plantain, salt, pepper, lime juice and cilantro leaves. Reserve.
- Sandwich:
- Cook the sausages in a skillet or in the grill until cooked through.
- Put the Flatout Foldit in a plate, cover with a lettuce leaf, put the sausages on top.
- Drizzle with mustard or chili pepper sauce, top with the tropical salsa, fold the Flatbread and serve immediately.
